I felt like trying something new.
1 3/4 c water
1 c uncooked couscous
1 1/2 c broccoli florets
1/3 c shredded carrot
1/4 c raisins
1/4 roasted cashews, chopped
2 Tbsp white vinegar
1 1/2 Tbsp olive oil
1 Tbsp sugar
1 1/2 tsp curry powder
3/4 tsp salt
1 can chickpeas, drained and rinsed
bring water to boil. gradually stir in couscous. remove from heat, cover and let stand 5 mins. fluff with a fork. steam broccoli. combine all ingredients.
