Banana Bread

Yum!



yep. that's mine!
Here is the recipe I used:

2 ripe bananas
2 eggs
1 1/2 cups sugar
1/2 cup oil
1/3 cup buttermilk
1 teaspoon vanilla
1 3/4 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup pecans 

In a large bowl, mash the bananas with a fork.
Add the eggs, sugar, oil, buttermilk, and vanilla to a large bowl.
Mix the wet ingredients really well.  Add the flour, baking soda, and salt.
Mix until just combined.  You do not want to over-mix this batter.
Fold in the nuts.
Pour the batter into a loaf pan coated with cooking spray.
Bake the bread in a preheated 350 degree oven for about an hour, or when a toothpick comes out clean.
