Lunch

Snowday Lunch, consisting of: whatever I can find in the pantry and fridge.
I made a rice noodle stir fry with red pepper, asparagus, carrots, onion, jalapeno, garlic, and my made-up-on-the-spot lime curry sauce. I wish the sauce had been stronger, because the rice noodles really soaked it up. So i added a sprinkling of fresh parm to make it even prettier. 


Just after I finished my lunch, I decided to attempt making my own pad thai sauce. And I LOVED it...but dad definitely did not. Ha!
I used:
2 tablespoons low sodium soy sauce
1 1/2 tablespoons brown sugar
1 tablespoon lime juice
1 teaspoon curry powder
YUM!
